I started a page on the wiki to list public wiki's using Sputnik:

If you have (or know of) a public site running Sputnik, please add it
to the list.  It doesn't need to be publicly editable, but it should
be intended to be seen by the public.  Please indicate which version
you are running.  (0.2.* = "Benjy", 0.3.* = "Cottington", 8.* = "Dish
of the Day".)
